If you’ve ever had a meal at Ryuko, you already know. The Japanese kitchen and bar has earned a loyal following since opening its first location in 2022 — blending fresh sashimi, modern cocktails, and bold, beautifully plated dishes into something distinctly its own. And now, they’ve opened their third location, right in the heart of Calgary’s Beltline.
Located on 14th Street SW, the new Ryuko is a sleek, minimalist space built for date nights, solo bar visits, or long dinners that turn into dessert. The interior feels sharp but warm — an understated backdrop for dishes that do most of the talking.
Expect signatures like Salmon and Hamachi Carpaccio, Tobiko Bibimbap, and Assorted Sashimi, plus cocktails like the Yuzu Chu-Hai that are citrusy, clean, and genuinely worth ordering again. And if you’re sticking around for dessert, go for the Yuzu Pavlova — it’s tart, delicate, and unexpectedly satisfying.
Behind the menu is Chef Jun Young Park, the culinary director of both Ryuko and sister concept Koko. He’s just come off a double win at the 2025 Stampede Chef Showdown — taking home both the People’s Choice and Judges’ Awards with a fire-seared Soy Chashu onigiri that’s now featured on the menu. (Pro tip: try all three — Yuzu Salmon, Truffle Shiitake, and Soy Chashu.)
