Ryuko West is bringing back one of its most talked about nights this month. A full giant Bluefin tuna flown in fresh, rolled into the restaurant, and broken down live by their chefs while guests watch the whole thing happen in real time.
It’s part theatre, part omakase, and very much a “you had to be there” kind of meal.
Instead of ordering your usual rolls, the night revolves around whatever comes off the fish. Think ultra fresh sashimi sliced minutes after butchery, specialty cuts you rarely see on regular menus, and one night only dishes built around different parts of the tuna as it’s broken down.
If you’ve ever seen a whole fish carving at a market in Tokyo, this is that energy, just tucked into a Calgary dining room.
Seats are limited and the vibe leans intimate and chef driven. You’re basically getting a front row seat to the prep, then eating the results immediately after. It feels less like a restaurant service and more like being invited into the kitchen for something special.
Also worth noting. Because the Bluefin is flown in specifically for the event, timing can shift if travel delays happen. The tradeoff is peak freshness.
For sushi fans or anyone who loves a food experience with a bit of spectacle, this is one of those rare nights that actually feels different from a normal dinner out.
